What happens when a fine arts
student turns into a chef? In Caitlin
Williams Freeman’s case they result
in unique and delicious bites for
those visiting the Blue Bottle Cafe
at SF MoMA. The chef roams
the hallways of the museum for
inspiration and finds edible ways
of honouring various artists housed.
In the case of the Mondrian cake,
a big oblong sponge is inserted
with thin, long pieces of smaller
yellow, red and blue pastries and
then ganached twice!
